The pasta and the crudo
Handmade pasta is the point here. The kitchen makes it in-house every day, and the restaurant singles out slow-cooked ragù, truffle dishes and seafood pastas as the ones regulars return for. Start with a crudo, since raw fish is one of the signatures, then go to pasta and decide on a main after. The menu shifts with the seasons, so don't get attached to a dish you saw online. The wine wall
More than 800 labels sit in a glass-enclosed cellar that doubles as the room's centerpiece, and most of them are Italian. That means Barolo and Brunello at the top end and a crisp Vermentino when it's hot out. Ask the staff instead of paging through the list alone, since pairing advice is part of the service. If wine isn't your thing, the bar plays the aperitivo card: spritzes, Negronis and house originals with an Amalfi Coast lean. Order one first and settle in, because nobody's rushing you.
