Ogawa Miami

It's for a special night at the counter with someone who eats everything raw and seasonal. The rules are strict: 72-hour cancellation, a 15-minute late window, and no vegetarian or no-fish menus.

The menu

The Kappo menu opens with a run of small seasonal dishes, moves into 8 to 10 nigiri, and closes with a handroll, miso soup and dessert. Master Chef Masayuki Komatsu, from Osaka, trained at Sushiden in New York, worked in Monaco and came to Miami as Morimoto's head chef. He and Chef Royce work behind the sushi bar, and that bar is the whole point. He sources from contacts across Japan's prefectures, so the lineup shifts with the season. It holds 4.9 from about 290 Google reviews, a small count but a very consistent one. The site lists no menu price, so ask when you book.

Drinks and corkage

Sommelier Luis Martinez runs the list: classic wines, artisanal sakes and rare Japanese whiskies. The pairing leans on grower champagnes, premium sake and classic wines, built to follow the seasonal menu. Bringing your own bottle costs $75 per 750ml and $150 per magnum, so corkage only makes sense for something you really care about. Owner Álvaro Perez Miranda, who's also behind Hiyakawa in Wynwood, modeled the space on a traditional Minka house, with calligraphy scrolls, contemporary nihonga paintings and a private Japanese garden tended by a local ikebana artisan. The fine print

Dinner runs Tuesday through Saturday, 6 to 9:30 pm. Sunday and Monday it's closed. Flag dietary restrictions at least 72 hours out, and know that no-rice, no-fish and vegetarian requests can't be handled at all. Changes and cancellations need 72 hours' notice for a full refund, and they go through email. Arrive more than 15 minutes late and you may lose the seat or miss courses already served. For groups, private dining and full buyouts go up to 12 guests. They also do catering and private dinners at your home.
