Carbone: what the reservation actually gets you

Carbone is the Miami branch of the New York red-sauce restaurant, at 49 Collins Avenue in South of Fifth. It serves dinner only, every night from 5:30 to 11 pm. The restaurant takes bookings through its own website, an authorized platform such as Resy, or by email at reservations@carbonemiami.com, and it says plainly that it cannot guarantee tables bought through anyone else. That is your warning about resold reservations.

Dress the part. The site says guests who are not well presented may be turned away, and it names the three things that do it: shorts, open-toed shoes and tank tops. If you bring your own wine, corkage is $95 per 750 ml bottle or $190 per magnum, and more than three bottles needs an email first.

Carbone does not publish menu prices online, so we are not going to guess them. Budget for the most expensive Italian dinner on this page.

Casa Gianna: the downtown Italian that does breakfast to late

Casa Gianna sits inside the Gale Miami Hotel & Residences at 601 NE 1st Avenue in downtown Miami. It is the most useful Italian address downtown because it is open from breakfast (8 to 11 am daily) through dinner, and its cafe next door, Cafe Gianna, opens at 6 am.

The dinner menu is one of the few in Miami that posts its prices. Pastas run from $19 for gnocchi al pomodoro to $36 for the short-rib ragu, with a lobster fra diavola at $65. Pizzas are $19 to $32, the margherita $21. Mains run $32 for chicken parmigiana to $65 for a 14 oz ribeye. A 20% service charge is added to the bill, so do not tip twice by accident.

Happy hour runs every day from 4 to 8 pm. Valet costs $25 with validation, which needs a $50 minimum spend, one per reservation, for up to four hours.

ll Pastaiolo - Italian Restaurant in Miami Beach

1130 Collins Ave, Miami Beach · South Beach · $$ · Open until 11:45 pm

Il Pastaiolo is the answer when you want handmade pasta on Miami Beach without dressing up for it. It opens at noon every day and stays open until 11:30 pm, or 12:30 am on Friday and Saturday, which makes it one of the latest proper Italian kitchens near Ocean Drive.

The menu leans on pasta made in house: cacio e pepe, ragu and carbonara, with chicken parmigiana and tiramisu for the rest of the table. Its listing also flags vegetarian, vegan and gluten-free options. Check current prices on its online menu before you go; we could not open a dated menu page.
